When I was a young bride-to-be, oh so many years ago, I was given a precious shower gift from my co-workers. They had bought me a recipe box, and each of my female colleagues had contributed two or three of her own recipes. Honey-glazed chicken was one of the recipes. It didn’t take me long to try it, and I was thrilled with how tasty, how quick, and how easy it was.
My husband loved it too, and it quickly became a regular on the dinner repertoire. When my children started to eat real people food, they also love it. Who wouldn’t?
Main ingredients for this meal:
A couple of tips – I used the Perdue (TM) frozen tenders (defrosted, of course) because they are a more uniform size than chicken breasts. If you choose to use a breast (breasts? it’s the whole breast of a chicken – two halves), you might want to cut them or pound them to have a more uniform thickness. You may also need to cook them a bit longer in each phase of cooking.
I generally cook one carrot for each family member plus 1 extra – somehow it works.
Quick tip: I use a glass Pyrex 9×13 casserole dish to cook the chicken, that way I can serve it in the same dish in which I cooked it. Same with the rice – I use a 2qt, covered Corningware dish that I can put on the table.
Of course, you can use a different vegetable or different starch, it’s up to you, but it might take longer than 35 minutes.

7 | Prep the carrots – scrape and cut into slices, and place in sauce pan, fill half way with water, and cover. Put on medium-high heat to steam. | 17 |

*Cooking times will vary with your microwave power and the rice you choose. Also, you can choose to cook the rice on the stovetop, but you will have to watch it and time it based on how long it usually takes you to cook it on the stove top. My experience has been that I can cook the rice on 50% power for 20 minutes straight, and this results in perfectly cooked rice (1 c) 99% of the time.
So, there you are, complete dinner in 14 easy steps and only 35 minutes! I love the sweetness (but not too sweet) of the chicken combined with the tender, buttery carrots, and the hearty rice. Your family is guaranteed to gobble it up! Make sure to get them to clean up after dinner.
Honey-Glazed Chicken
Ingredients
- 1 boneless skinless chicken breast two halves
- 1/4 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons lemon concentrate Real Lemon
- 1 teaspoon vegetable oil optional
- 1/2 teaspoon ginger
- 1 teaspoon garlic powder
- 1/2 cup flour
- salt & pepper
- cooking spray
Instructions
- Preheat oven to 350 degrees.
- Put the honey, soy sauce, lemon, oil, and ginger in a bowl and "melt" in microwave for ~1 minute.
- Put flour, garlic powder, and salt & pepper in plastic bag and add chicken. Shake to coat chicken w/flour mixture.
- Take a baking dish just big enough for the chicken, coat with cooking spray. Add chicken and bake at 350 for 10 minutes.
- Add the glaze to the chicken and cook for 5 minutes.
- Turn chicken in glaze and cook for another 5 minutes. Serve.
Notes
Cooking times may need to be longer if you have a really big, thick, breast. I use the Perdue frozen tenders (defrosted) so that they will cook evenly. I have used the equivalent of 2 chicken breasts for the same amount of glaze, but this doubles easily.
