Happy Thanksgiving. I hope you are reading this before the big meal. If not, try to put your practical hat on and ignore your full stomach and think about what you are going to do with all your turkey dinner leftovers.
I have three of my favorite things to do with turkey dinner leftovers. The great thing is that, if you are sick of turkey already, you can make all three of these to freeze and eat later when you are no longer in a turkey coma. You will be so happy to pull these out of the freezer and put them on the table some busy week night in the winter – pure comfort food for all.
The first recipe is for turkey soup, but not any turkey soup – this soup is not your grandmother’s turkey soup (not that her’s wasn’t great, I’m sure), but this soup – with barley for starch and mushrooms, it so rich and satisfying, you’ll wish you made two batches.
The next recipe is great to serve the family – are we having turkey? Or pasta? Well, it’s both! Turkey Tetrizzini is one of those classic dishes that has stood the test of time because of the yummy combination of turkey, pasta, mushrooms, and cheese.
If you still have turkey, stuffing and gravy left after making soup and Turkey Tetrizzini, then you will thank yourself for taking the time to make a Turkey Leftovers Pot Pie. Wrap it and pop it in the freezer, and on some February night when it’s cold and snowing, you are going to win cook of the year award when you serve this to your family. Every bite will remind them of the wonderful holidays that you had.
